Chef Maurizio Falchi

Born in ’72, he has always been determined to pursue his path in the world of international cuisine. After leaving the Hotel School of Oristano in ’88, he wanted to start working immediately, learn from the greats, and tell the story of his land and its traditions. He travelled through Liguria with master Gianni Malagoli, to whom he owes his initial growth and the consolidation of his passion. He gained international experience from Hong Kong to Zurich to Antigua. He tested himself in high-level kitchens like Villa Crespi with chef Natale Bacchetta and, upon returning to Sardinia, collaborated with local talents. His story and experiences brought him back to his homeland, where it all began, and he rediscovered his culinary philosophy based on genuineness and raw materials. A Mediterranean cuisine where the flavours of the territory combine in simple harmonies without compromising the freshness of the product with excessive technique.

Our dishes

The menus reflect the philosophy of Ros’e Mari Farm and Greenhouse, where fresh and seasonal ingredients are treated with respect and creativity. Vegetables, fruits, and herbs have travelled only a few metres to reach the kitchen. Fresh fish and meat are all locally sourced and perfectly paired with local ingredients, a true celebration of both land and sea.

At Ros’e Mari, we firmly believe that the art of pizza lies in the essence of its origins and the purity of its ingredients. For us, every pizza is a masterpiece that begins with the selection of the highest quality raw materials. The heart of our pizza is the dough: fragrant and soft, prepared with a meticulous selection of stone-ground Italian flours. The slow and natural leavening allows the development of aromas and flavours that only time and passion can provide. Our menu follows the rhythm of the seasons, offering flavours that change and renew, always maintaining a deep connection with tradition.
